I made this recipe a few days ago. I just followed the directions on the back of the McCormick packet. However, I changed it up a bit. I added corn for a bit of sweetness. Super easy and fast recipe!
Cook up a pound of chicken for about 3-5 minutes.
Then add seasoning, white beans (drained) and 1 cup of water.
Cook for 10 minutes. Then I add the corn just After about 5 minutes of cooking I added the corn, just enough time to get it warmed up but not overcooked!
4 Cheese Enchilada Bake
1lb ground beef
2t Chili powder
Cup of Mexican blend or shredded chedder cheese
1 Bar of Cream Cheese
1 Cup of Salsa
Prehead over to 400 degrees
Brown the beef with the chili powder, drain
In a separate bowl mix cream cheese, shredded cheese and salsa
Lay down 3 tortillas in 13x9 baking dish, then beef, last cream cheese mixture
Keep doing another layer, I like to sprinkle cheese on the top layer.
Cover with foil for 20 minutes, then uncover for an additional 5 minutes, or to how you like your cheese.
Easy Chicken Torilla Soup
1 Can of Chicken
1 Can of Chedder or Fiesta Cheese Soup
2 Cans of Milk
1 Can Red Enchilada Sauce
1 Can of Black beans
Additional for Topping
Mix top 6 ingredients in large soup kettle on medium heat, stirring frequently. Bring to slow boil. When boiling turn the heat to low and simmer for 15 minutes. If using regular uncooked chicken, cook until chicken is done. Top with shredded cheese and torillas.
